People say "Street food King in India". KOLKATA! The City of Joy . This is also known for tasty and surprisingly cheaper street food in India.
After exploring almost 3 years and after landing here from North East India(TRIPURA), I think I can say this is the right time for me to comment. I love to eat street foods and like me many others are present here who likes to eat evening snacks as a street food.
Apart from being rich in heritage and cultures,it also equips us with varieties of street foods. Lets explore them with their recipes.
Street Style - Egg Roll
The Recipe Serves: 2 person
Ingredients:
plain Paratha
4 eggs – well beaten with salt according to your taste, pepper and chili powder
1 medium finely chopped onion thinly sliced
Slices of beetroot and carrot finely chopped (Optional)
Sprinkle of salt and crust pepper
Lemon juice – 1 tbsp or half of lemon
Atta/Flour -1 1/2 cup
5-6 Tablespoons of oil
Hot N Sweet Tomato Sauce
Chili Sauce
2 green chili finely chopped ( If you don't like spicy,can avoid it)
The Cooking:
The Paratha:
Take flour and add a bit of Luke warm water, salt and a few drops of oil.
Knead the dough and make it to a smooth round ball.
Rest it for some time around 10 to 15 minutes.

Flatten it into a round thin base using a rolling pin.
You can sprinkle some more flour so that it does not stick while rolling.
The Roll:
Heat a tawa/pan, and add 4 tablespoons of oil.
Gently ease the paratha into the oil and add part of the beaten egg(2 eggs per paratha).

Let it simmer for few minutes. Turn the paratha gently on the tawa and add the remaining egg. Let it cook till the egg is evenly fried on both sides of the paratha.
Once the egg paratha is ready, spread chilli sauce and tomato sauce on one side, then add the finely chopped cucumber, onions and green chillies.
At last squeeze a little bit of lemon juice and roll the egg paratha.
Do it same for the rest. Secure it firmly on one side with a rolled tissue paper.
Your lip-smacking Egg Roll is ready to be devoured.
