Malpua Recipe : Bengali style fried Indian desert

Bengali Malpua Recipe :


Winter has almost gone,then also we Bengali love to eat pithas(Bengali sweet dish).
If you wish to treat yourself with some homemade desserts which is both healthy and tasty, then a malpua would be a good choice. Malpua is a common dessert in Bengal  and is cooked in every household during poush sankranti.

I personally  like malpua among all the other deep fried sweet dishes.

Malpua is one of the easy one  to make pithas. All you need is maida(flour),sooji(semolina),sugar,milk and cardamom powder,funnel seeds for flavor.





            
Bengali malpua recipe

It is almost like making pan cakes but you have to  deep fry it .Some people also  use mashed bananas in the  batter to increase the richness of the pitha( that case you may not be able to store it for long period).


Let me share with you my recipe for the perfect malpua.

Bengali Malpua Ingredints:


1 cup all purpose  flour or maida
1/4 cup sooji(semolina)
1 cup liquid milk
1 cup sugar (according to the sweet you like)
1/4 cup powdered milk (you can  use 1/4 cup condensed milk also)
1/2 teaspoon green cardamom powder

1/2 teaspoon funnel seeds
Ghee or refine oil for deep frying


Directions:


Take a bowl and combine all the dry ingredients together.
Now add milk(keeped on room temperature) to it little by little and mix them. Don't try to pour the whole milk at a once, so the mixture can become very runny.Make a mixture which will be not to much thick or not too much runny. cover it and rest for 1  hour.

I saw my mom to add a pinch of salt to make the flavor balanced. But its totally up to you.


Now heat ghee or oil in a kadhai/pan for deep frying.
Pour a small ladle full of batter in the hot ghee. It should spread by itself to form a round shape ,deep fry them from both sides on medium heat till  it turns golden brown.

Repeat the steps for the remaining batter.





Serve them  hot and you can garnished them with cashew nuts. Enjoy :)

In my childhood, my mom didn't get any time to serve them together or garnish them,we just waiting for malpuas to come from the hot kadai  and it was directly go hot in our mouth.
