Crispy Chili Baby Corn Kolkata Style | Baby Corn Manchurian Recipe
Today I am going to share one of the most famous street food in Kolkata. It is very famous for Office guys. I saw many people having this on the street while doing chit chat with their friends. Not only our generations, middle aged people also enjoy this food a lot. It is basically a chines dish with some Indian twist (or can say Kolkata twist).
Crispy Baby Corn is a quick delicious Indo-Chinese recipe served as a Starter. For my veg days when I am unable to carry my home food to office, I prefer to go and eat this as my lunch . It is a famous veg street food in Kolkata and is very easy to prepare.
So lets start:

Crispy Baby Corn is very easy to prepare with very few ingredients but very tasty and flavorful.
Before starting the recipe I just want o share the look of the food ,when it comes hot from the kitchen and placed in front of you. Baby-corns are coated with a batter with corn flour, egg & seasoning and deep fried. Then the fried baby corns are tossed with chopped garlic , onion flakes , tomato ketchup ,dark soya sauce & seasoning. And a sprinkle of sesame seeds on it. Haven for street food lovers. Lets see the recipe.
INGREDIENTS:
- 250 Gm baby corn
- 1/4 cup all purpose flour (maida)
- 1/4 Cup Cornflour
- Salt as per taste
- 2 Tsp ginger garlic paste - oil to fry
- 2 Tbsp chopped ginger garlic (Garlic 6 to 7 cloves)
- 1 Medium sized capsicum sliced into big cube pieces
- 2 Medium sized onion cut into big cube pieces and separated
- 1 Tsp red chili powder
- 1 Tsp crushed black pepper
- 1 Tbsp tomato ketchup
- 2 Tbsp red chili sauce
- 1 Tsp vinegar or lemon juice
- 1 Tbsp soy sauce
- Around 1/4 cup water
- 1 Tbsp cornflour + 2 Tbsp water
- 1 Tbsp honey or sugar -sesame seeds and green onions for garnish

- 2 Tbsp red chili sauce
- 1 Tsp vinegar or lemon juice
- 1 Tbsp soy sauce
- Around 1/4 cup water
- 1 Tbsp cornflour + 2 Tbsp water
- 1 Tbsp honey or sugar -sesame seeds and green onions for garnish
Method To Make
Cut the baby corn from middle lengthwise and then cut them into 4 to 6 pieces according to the length (Thin slices are recommended else corns will not coated and cooked properly).
Boil some water and put some salt. Add those baby corns and boil them for 5 to 7 mints on low to medium flame(Don't over cook theme). After that strain them from the water and keep aside.
After the corns are cooled down add the all purpose flour and the corn flour, salt(as per your taste), ginger - garlic paste and mix theme . If you think the batter is too dry add a little water and make sure the coating is stick to each baby corn properly.
Hit some oil on kadai or pan for deep frying those little baby corns . Add theme one by one in the oil and make sure they don't stick to each other. Flame should be medium to high.
We will use here double fry method for extra crisp. So when they are slightly brown we will take them out . We will rest them for 5 to 10 mints and then again deep fry theme till they become golden brown. Take theme out on a kitchen towel or paper to soak the extra oil on it or it will be better if you keep theme on a air passing food bowl or mesh so that they can stay crispy. Do it for your rest of the baby corns.
Now for the tasty Sauce:
Put some oil in a kadai ,once the oil become hot add the chopped ginger garlic and sauté these for few seconds until they become a little golden brown and their raw smell has gone.
At this time add the cube onion slices, cook for a mint. Add the capsicum cubes and sauté theme. Now add the red chili powder followed by the crushed black pepper, tomato sauce, chili sauce, a little vinegar or lemon juice to get an extra twist, soya sauce and mix theme very well and cook for few seconds (the flame should be high). Add a little water and bring it to a boil. At this time add the corn flour and water mix (make sure while adding this corn flour water keep steering your food). At this point, if you need to add water you can add a little more. Check the seasoning if needed add a little. Now add honey or sugar and give a good mix to that. Finally add the baby corns and mix them properly with low flame. Toss them until each and every baby corn is coated with the sauce.
Server them hot with a sprinkle of sesame seeds and green onion on top.
